Coconut Tapioca Drink

I love almost anything coconut! At a nearby restaurant, Phoenix, they have this great mixed fruit tapioca drink. I tried to make something similar and it's not bad! You might want to experiment yourself. This recipe isn't full proof. Think of it as a foundation to start.

  • 1 oz tapioca balls
  • 1 oz young coconut or fruits (the more the better)
  • 1 cup coconut milk
  • 1 cup 2% milk
  • 6 oz sugar (melt 6 tablespoon sugar with 6 oz of hot water)

Yes, that's a lot of sugar. I actually prefer 1 cup of sugar. I like my drinks sweet! First thing I did was cook the tapioca balls in boiling water. You can tell when they're done when they become transparent (about 12-15 minutes on medium heat).

It should look like this when done. Looks kind of gross but it's delicious :)

I used young coconut meat and cut them up in slices. Feel free to use any yummy fruit instead. Put the tapioca balls and young coconut meat in a cup and bring the coconut milk, 2% milk and sugar to a simmer over the stove. When mixed well, put everything together and that's it!
