Roasted Eggplant


We haven't tried oven roasted eggplants before so we decided to try it with meat and garnished with parmesan cheese and parsley. I believe the meats I used were peppered salami, prosciutto, and coppa. The one that worked the best was the coppa. The prosciutto turned out too thick and chewy.


I put it in the oven at 350 degrees for about 12 minutes or until the eggplant was soft. My husband liked this dish so I'll probably do it again!
